and mocha. The palate is full-bodied with finely integrated tannins and acidity,
showing notes of wild blackberries, tobacco leaves and cedar. Very nicely balanced and constructed.

Herb marinated lamb
chops

INGREDIENTS
8 lamb chops
B cup parsley, minced
Z cup cilantro, minced
4 thsp rOsemary, minced
1 tbsp thyme, minced
2 thsp garlic, minced
1 shallot, minced
2 thsp extra virgin olive oil
Salt, to taste
Black pebper, to taste
DIRECTIONS
1.In a bowl, mix together parsley.
cilantro, rosemary, thyme, garlic,
shallot, and olive oil until well
combined.
2. Generously coat both sides of the
lamb chops with the herb mixture.
Cover and let marinate overnight in
the refrigerator.
3.Preheat a grill to mediumn-high heat.
4. Season the lamb chops with salt and
black pepper.
5.Grill the chops for about 3-4 minutes
per side for medium-rare, or until
your desired doneness.
6.Let rest for a few minutes before
serving. Enjoy!
Smash potatoes with
herb cream fraiche
4 servings I hour
INGREDIENTS
Smash Potatoes:
1 lb fngerling potatoes, halred
3 tbsp butter, melted
3 tbsp olive oil
2 thsp dried þarsley
2 thsp garlic powder
2 thsp onion povder
Salt and pepper, to taste
Herb Crème Fraîche:
1 cup crèmne fraiche
2 thsp lemon juice
1 thsp dried parsley
1 thsp dried oregano
Pinch of'salt and pepper
DIRECTIONS
1.Preheat the oven to 375 F (190°C).
2. Boil the potatoes in salted water
until fork-tender. Drain and set
aside.
3.Prepare the seasoning: In a large
bowl, mix melted butter, olive oil.
dried parsley. garlic powder, onion
powder, salt, and pepper. Toss the
cooked potatoes in the mixture until
evenly coated.
4. Smash the potatoes: Line a baking
sheet with parchment paper. Place a
few potatoes at a time on the sheet
and gently press down with the back
of a flat cup to flatten them. Repeat
with all potatoes.
5. Brush with any remaining butter
mixture to enhance flavor.
6. Bake for about 1; minutes or until
golden brown and crispy.
Herb Crème Fraîche:
1.In a bowl, whisk together crème
fraiche, lemon juice, dried parsley,
dried oregano, salt, and pepper.
2.Adjust seasoning to taste.
3.Transfer the mixture to a squeeze
bottle for easy serving.
4.To Serve:

the warm, crispy smashed potatoes
